The CVRVV's Tasting Panel consists of a Head
Taster and three members.
Wine samples are labelled
"blind" by series to ensure confidentiality and
are individually tasted by members of the tasting panel,
who then enter their comments on the respective forms
which are examined and discussed before the writing of
the final report.
In the event of the entire Panel cannot
reach an agreement as to the sensorial analysis of a
sample, the Head Taster may exercise his right to veto
the conclusions regarding the wine, or wines, in
question. The matter in then submitted to the Appeals
Committee, the "body of last resort", whose
decision is irrevocable.
The Appeals Committee only meets
following a veto or upon the request of the supervisory
entity.
